Our local packing plant allows us to maintain our olive oil quality. Because heat and light are the major factors affecting particularly extra virgin olive oil, we store ours in large stainless steel industrial containers and food-approved, 55-gallon drums only packing it in food service and consumer sizes when an order is placed.
